Jeffrey roasted BOTH a turkey and a chicken this year, so we have LOTS of leftover meat for this recipe!

| Every year, I cook a turkey dinner sometime during the holidays. And there is always lots of leftover turkey! I try to use everything, including what’s left of the turkey after most of the meat has been removed from the bones. The remains go into a stockpot to simmer slowly for several hours yielding the essential base for delicious (and nutritious) soup. My Mom taught me how to cook and not waste food, and I guess I learned that lesson well!The following casserole recipe calls for leftover turkey and filling. The sauce recipe can be cut in half if you have less meat and filling than noted in the recipe. As a variation, you could also add leftover plain vegetables, such carrots, corn, or green beans to the casserole if you choose.

| Ingredients |
| 4 cups cooked turkey (or chicken) diced 6 cups of fillingSauce: (white sauce) 2 heaping tbsp. flour 1/2 c. butter salt and pepper to taste 2 cups milk 1 c. meat stock (no fat) |
| Step by Step |
| To make sauce: 1) In a heavy saucepan, melt butter. 2) Remove from heat, and stir flour into butter until it’s a smooth paste. 3) Return pan to heat, and add milk all at once, stirring well. 4) Add stock. 5) Cook, stirring constantly over medium heat until sauce is thickened and bubbly. 6) In a baking dish, layer filling and meat, pouring some sauce over each meat layer. 7) End with a filling layer. 8 ) Bake at 350 degrees F for about 30 minutes or until bubbly. 9) If it looks like the top layer is drying out too much place a piece of aluminum foil loosely over the top of the casserole. 10) Serve and Enjoy! |
