Special Apple Pie
HALLOWEEN MEMORY
Halloween was never really a big thing for me growing up and has been even less to me in my adult years. Though my oldest is grown and living on his own now, my youngest and I do enjoy decorating for Halloween, then soon it’s time for Holiday baking. This year we plan to make pies! Pies, pies and more pies!
We are lucky enough to have a source to go picking our own apples and this year they were plentiful. What fun to pick apples while my 9 year old climbs trees between the few apples he helps to put in the bags.
I do everything in bulk, and in stages. So here are my stages for you to get an idea on how things go for me:
Stage one: is to pick them of course and then it’s on to peeling and coring.
Stage two: is filling the BIG cooking pot with apples a little lemon water, lots of brown sugar (this year I did most of them with brown sugar twin for my diabetic mother), some bits of butter/margarine and sprinkle thru some flour, cinnamon & nutmeg.
Stage three: is to fill the mason jars, seal and put into the water bath. Yep no fancy pressure cookers here, just the old-fashioned boil in the water for 15-30 mins., depending on the size of the jar.
Stage four: months later is to make the pie crusts and fill with the already made filling, cook and enjoy!

Now for those of you who don’t have the patience to wait that long. Here’s a recipe you can follow and make in one day. Be mindful of the crumble though… I always make that in bulk as I use it for many things!
INGREDIENTS
Crust:
1 cup all purpose flour
1/2 teaspoon salt
1/3 cup shortening
2 to 4 tablespoons ice water
(many times I will sprinkle in some cinnamon with the flour for the pie crust)
Filling:
1/2 to 2/3 cup brown sugar (depending on the sweetness of apples)
Pinch of salt
1 tablespoon cornstarch (if apples are juicy)
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg (to taste)
7 cups thinly sliced, cored peeled apples
1 1/2 tablespoon butter
1 tablespoon lemon juice (if apples are bland)
1 tablespoon water or cream (if apples are very dry)
Crumble: (use only amount that’s needed)
2 cups all purpose flour
2 cups quick-cooking rolled oats
1 1/2 cups firmly packed brown sugar
1 1/4 cup margarine or butter, softened (use only hard margarine)
INSTRUCTIONS
STEP 1 – Roll out dough on lightly floured surface to fir a 9-inch pie plate.
STEP 2 – Blend sugar, salt, cornstarch and spices in a large bowl. Add apples slices and toss lightly until coated. Mound apple slices in pie shell. Dot with butter and sprinkle with lemon juice and water or cream if necessary.
STEP 3 – Sprinkle crumble across the top of the apple mixture.
STEP 4 – Bake in preheated 375F oven for 50- 60 mins or until apples are tender and crust is a golden brown.
Serves 6
