Pumpkin Pecan Pie
HALLOWEEN MEMORY
Fall and Halloween are the time of year that I am most electrified. Everything about this season, from the colors to the smell of leaves burning, excites me. An added bonus to this season is that my birthday is in October. My husband is a fabulous cook and about 10 years or so ago this recipe became my birthday cake of choice. It is just another way for me to get some more pumpkin into my life since I feel you can never have enough.
INGREDIENTS
Make the pumpkin pie filling according to your favorite recipe
or following the pumpkin can directions. Set aside.
Pecan Pie Syrup:
3/4 cup sugar
3/4 cup dark corn syrup
2 small eggs
1 1/2 Tablespoons unsalted butter, melted
2 teaspoons vanilla extract
Pinch of salt
Pinch of ground cinnamon
3/4 cup pecan pieces or halves
INSTRUCTIONS
To Assemble:
STEP 1 – Spoon the pumpkin pie filling evenly into the pie crust.
STEP 2 – Pour the pecan syrup on top.
STEP 3 – Bake in a 325 degree oven until a knife inserted in the center comes out clean, about 1 3/4 hours.
NOTE: The pecans will rise to the top of the pie during baking.
STEP 4 – Serve with vanilla ice cream or chocolate ice cream if you are adventurous.
Plain pumpkin pie will never taste the same after eating this!!
