Pecan Pie Cookie Bars
HALLOWEEN MEMORY
I found this in Dec. 2001 in the Chicago Tribune and had to try it! It is wonderful! It’s very rich so cut the squares small. — Karen
INGREDIENTS
1 C. Flour
1/2 C. packed light brown sugar
1 stick (1/2 C.) unsalted butter, softened
1/8 tsp. Salt
For Topping:
3/4 C. packed light brown sugar
1/2 C. maple syrup
2 lg. Eggs2 T. Flour
6 T. unsalted butter, melted
1/8 tsp. Salt
1 tsp. bourbon
1 tsp. vanilla
1 3/4 C. pecans, coarsely chopped
INSTRUCTIONS
Preheat oven to 350 degrees.
STEP 1 – Combine flour, brown sugar, butter and salt in a bowl of electric mixer or food processor with metal blade until crumbly.
STEP 2 – Transfer mixture to ungreased 8″ or 9″ square pan.
STEP 3 – Press firmly into bottom of pan.
STEP 4 – Bake until lightly browned, about 18 minutes.
For topping:
STEP 1 – Combine brown sugar, maple syrup, eggs, flour, butter, salt, bourbon and vanilla in same bowl as you did the base.
STEP 2 – Mix until just mixed together.
STEP 3 – Stir in pecans.
STEP 4 – Spoon topping over the baked base.
STEP 5 – Return to oven until surface is set and lightly browned, about 35 minutes.
STEP 6 – Cool completely on rack.
STEP 7 – Refrigerate until firm, 1 hour.
STEP 8 – Cut into squares.
Makes about 16-20 bars.
