Wild Rice Soup
HALLOWEEN MEMORY
There is a chill in the air and that means that it is time for a hearty soup to keep you warm. I have been making this soup for many years and it has evolved over time to what you see here. Wild rice is a staple for the Ojibwa people of this region and I was introduced to it about 30 years ago when I traveled to the family cabin located near the Lac Du Flambeau reservation. Wild rice in many forms has become a favorite in my family. Halloween can be chilly here and we always have to design children’s costumes so that a winter jacket will fit under it. This soup is great for warming up before or after trick or treating.
INGREDIENTS
1 cup finely chopped carrots
1 cup finely chopped celery
1 large onion, finely chopped
8 oz. fresh mushrooms, sliced
1 cup wild rice
1 1/2 cup white or brown rice
5 cups water
1/4 cup sherry
1 can cream of mushroom soup, undiluted
4 tbs. low salt chicken base
1 tbs. garlic powder
1 tbs. olive oil
INSTRUCTIONS
STEP 1 – In a large kettle sauté carrots, celery and onion in the olive oil.
STEP 2 – Add wild rice and white rice and sauté 5 minutes.
STEP 3 – Add water, sherry, mushroom soup, mushrooms and garlic powder.
STEP 4 – Simmer covered for about one hour stirring every 10-15 minutes.
STEP 5 – Add additional water as needed.
STEP 6 – About 15 minutes before serving add the chicken base and continue to simmer.
STEP 7 – Crumbled bacon may be added to the top of each bowl if desired.

Tomato Cheese Pie
HALLOWEEN MEMORY
Nothing says fall more than the changing weather. I see my garden reaching the end of the season as well and I can’t savor the flavor of home grown tomatoes enough! This is a great recipe to use some of the wonderful tomatoes. It’s a warm recipe for cool evenings. Don’t forget, if you have some of those end of the season tomatoes still in your garden and they’re still green, you can wrap them individually in newspaper, and place in a bucket in a cool place and they will last a remarkably long time, while continuing to ripen. I’ve had them last as long as a month after picking this way. They must be picked before any chance of frost.
INGREDIENTS
One 9″ pie crust
3 medium tomatoes, cut into thin wedges
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. basil
1/2 tsp. Italian seasoning
1/4 cup chopped chives
1 cup mayo
1-1/4 cup shredded mozzarella cheese
1-1/4 cup shredded cheddar cheese
INSTRUCTIONS
STEP 1 – Bake pie crust in 425° oven 5-7 minutes
STEP 2 – Remove from oven and reduce heat to 400°
STEP 3 – Put tomatoes in shell and sprinkle seasonings over tomatoes
STEP 4 – Mix mayo with cheese and spread over top of tomatoes
STEP 5 – Bake 35 minutes or until crust browns.

Asparagus Potato Soup
HALLOWEEN MEMORY
The first big holiday of the fall, Halloween, ushers in the crisp
autumn air and the need for slow-cooker meals to fill the air with
the smells of home. Drop all the ingredients in your slow-cooker to
make for a hearty soup, and leave time during the day for all that
quilting and sewing!
Jen Eskridge of ReannaLily Designs created this original recipe for Asparagus Potato Soup.
INGREDIENTS
1 can Cream of Chicken and Mushroom Soup
1 can Cheddar Cheese Soup
14.5 oz can of cut asparagus with tips (with juice)
6.5 oz sliced mushrooms (with juice)
14.5 oz milk (measured in the asparagus can)
4 small baker potatoes, cubed
½ tsp pepper
1 tsp dried oregano
½ cup water
2 chicken bullions
INSTRUCTIONS
Certainly you can make this on the stove, but I threw mine in the crock
pot (on low) for the day. — Jen
Ok- that’s it. Add all the ingredients into a crockpot and wait for
the magic to happen (about 6 hours). And when I say magic, should
you be cooking this on the stove- You’re really just simmering
it ’til the potatoes are tender.

Vampire Bat Wings
HALLOWEEN MEMORY
I LOVE Vampire Bat Wings because they are SUPER easy to make, everyone loves them and leftovers (if there are any!) heat up nicely. Halloween is one of my favorite holidays and it just happens to fall in the middle of the best season here in New England – crisp days, fresh apples, bugs are gone and all those glorious colors. Whenever we have a Halloween party we serve up all kinds of spooky-ooky stuff. I like to have a printed menu at the buffet, this is a great way to tell the story of your exploits to gather the bat wings. Don’t forget to mention that they are smothered in garlic to drive away all those angry wingless vampire bats! Change the name of the recipe and you have a great appetizer for the rest of the year!
INGREDIENTS
4 lbs. chicken wings
3 sticks butter, cut into chunks
1/3 cup chopped garlic, fresh or jarred
2 Tablespoons garlic powder
Salt & Pepper to taste
INSTRUCTIONS
Preheat oven to 350 degrees.
STEP 1 – Boil the chicken wings for twenty minutes in a large pot.
STEP 2 – While the wings are boiling, prepare the sauce. Put the butter in a large roasting pan and place in the oven to melt.
STEP 3 – Once melted, add the garlic, garlic powder, salt and pepper and whisk together. Return the pan to the oven and let the sauce heat up for about 5 minutes then whisk again.
STEP 4 – Drain the wings and add to the roasting pan tossing to coat with the sauce.
STEP 5 – Bake for 20 minutes.
STEP 6 – Increase the temperature to 450 degrees. Toss the wings in the sauce again and bake until the wings are lightly browned, about 5-10 minutes.
Make sure not to overcook or burn the garlic.
Serve hot or at room temperature.
