Spiced Apple Cider

HALLOWEEN MEMORY

Although I live in Texas now, I have fond memories on being warmed up (from the inside out) while having a mug of Hot Spiced Apple Cider.

INGREDIENTS

1 gallon of apple cider
3 oranges
Hand full of whole cloves
2 cinnamon sticks
1/2 pint of Bacardi Gold Rum

INSTRUCTIONS

This recipe is best made a day ahead before serving.

Preheat oven to 325 degrees.

STEP 1 – Using a knife, make small slits along the length of each orange.
STEP 2 – Insert whole cloves in the small slits in the oranges.
STEP 3 – Place oranges in  preheated oven for 30 minutes.
STEP 4 – Over medium heat, pour apple cider and add cinnamon sticks in a large pot.
STEP 5 – Place oranges in the apple cider mixture.
STEP 6 – Push oranges down with spoon to release the orange juices in the apple cider mix.
STEP 7 – Add 1/2 of Bacardi Gold Rum and taste. If you desire a stronger taste add the
remaining Bacardi Gold Rum.
STEP 8 – Heat apple cider mixture until hot. Let cool and pour in pitcher.
STEP 9 – Cover and place in refrigerator over night.
STEP 10 – Reheat next day and enjoy!

Mouth Without A Head Scary Snack

HALLOWEEN MEMORY

Mouth Without Heads is a snack that Mary Devendorf, owner of Marin & Colusa, used to make with her Girl Scout troop. The kids loved making and eating them. And the adults loved them also. The combination of flavors is yummy together. And it couldn’t be simpler.

INGREDIENTS

Apples
Peanut Butter
Miniature Marshmallows

INSTRUCTIONS

STEP 1 – Take a large red apple (the lips) and slice into wedges, about 8 per apple.
STEP 2 – Spread peanut butter (the gums) on one side of each.
STEP 3 – Place 4-5 small marshmallows (the teeth) in row on top of peanut butter.
STEP 4 – Place a second apple wedge on top of teeth.
Eat and enjoy!

OK… my friend Jenny has really nailed me here! My weakness is Shortbread Cookie recipes. I kid you not! I have several different recipes that I make on a regular basis — I use the fake sugar and low carb flour, so they aren’t too bad for me! LOL

But this time I am REALLY in trouble since she has managed to come up with a CHOCOLATE version! Yeesh! LOLOLOL

Chocolate Drops (little chocolate shortie cookies)

As a child I lived between the twin USAF bases of Woodbridge and Bentwaters.  Our family became friends with an American family based at Woodbridge and at Halloween we would be invited to go trick or treating on Woodbridge base.  This was about 30 years ago and nothing like this ever happened around the English villages, so as you can imagine we all just had such a great time dressing up and getting sweets that were completely different to what we were used to.  Now trick or treating is slowly becoming a traditional event in the English villages, and I’m able to take my own children around just as I used to way back then.

INGREDIENTS

100g soft margarine (about 9/10s of a stick!)
50 g caster sugar (1/2 cup of superfine sugar)
120g self-raising flour (1.2 cups)
15g cocoa (7 teaspoons or 4.4 Tablespoons)

INSTRUCTIONS

STEP 1 – Cream together margarine and sugar.
STEP 2 – Gradually mix in the flour and cocoa.
STEP 3 – Bring together to form a dough.
STEP 4 – Take pieces of the dough about the size of a walnut, make into a ball and place well apart on a greased baking sheet.
STEP 5 – Use a fork dipped in water to flatten the cookies.
STEP 6 – Bake in a  pre-heated oven for about 15-20 minutes at 170 C until lightly browned.  Lift off baking tray and leave to cool.

Once cool, enjoy with a cup of tea.  My mum often used to sandwich two together with some butter cream and these are especially good.

Peanut Butter Popcorn

HALLOWEEN MEMORY

This is a recipe that my mom often made at Halloween.  It can be shaped (with buttered hands) into popcorn balls as soon as it is cool enough to handle safely.  We used it for trick or treaters back in the last century when home made treats were still considered safe!  It is a fun and easy treat any time of the year!

INGREDIENTS

1 c. white sugar
1 c. white corn syrup
1 c. peanut butter  (smooth or crunchy)
6 -7 cups popped corn (plain)

INSTRUCTIONS

STEP 1 – Bring the sugar and corn syrup to a boil and boil one minute.  (I use a 4 cup glass measuring cup and boil it in the microwave.)
STEP 2 – Stir in the peanut butter and pour over the popcorn in a large bowl.
STEP 3 – Stir as it cools to keep it from sticking together.  This also makes good popcorn balls.
STEP 4 – When it is cool enough to handle, shape into balls with buttered hands.

Taffy Apple Salad

HALLOWEEN MEMORY

Fall is here and the apple tree branches are loaded with ripe red fruit ready to be
picked. We live on an old apple orchard that once shipped apples and pears all over
the country. When we moved here the apple trees were in the state of decline but
still producing fruit and organic of nature as they hadn’t been sprayed for 20
years. We would pick a weekend in the middle of October, borrow the neighbors
hand cider press and invite friends and neighbors for a day of apple picking and
cider making. The day would end with a bonfire, hot dog roast and a bean soup
competition. It was a yearly event for many years until all the muscle power left
for college. The kids that once cranked the cider press return now with their kids
to see if the old apple trees are still there and producing….they aren’t. We have
the best time tho recalling those days and revisiting both their youth and ours.
Here is a recipe that Susan and I enjoy making at this time of the year and you
don’t even have to wipe the juice off of you chin to enjoy this Taffy Apple Salad.

INGREDIENTS

1 Tbsp. flour
1 egg
1/2 cup sugar
1 small can crushed pineapple, drain and save juice
2 Tbsp. apple cider vinegar
4 cups chopped apples (with skins)
1 cup dry roasted peanuts
1 – 8 ounce whipped topping

INSTRUCTIONS

STEP 1 – Stir flour and 1/2 of pineapple juice until smooth. Mix with sugar, remaining juice,
vinegar and egg.
STEP 2 – Heat on low until thickened.
STEP 3 – Refrigerate 1 hour.
STEP 4 – Mix pineapple, apples and 1/2 of peanuts.
STEP 5 – Then mix with cooled mixture.
STEP 6 – Fold in whipped topping.
STEP 7 – Top with remaining peanuts.
STEP 8 – Cover and refrigerate.
Best if eaten the same day!
