Glazed Beet Bread

HALLOWEEN MEMORY

I love Halloween. Trick or Treaters to my house are greeted by my two Chihuahuas,
Mosquito and DustBunny, in costume.

I’m sharing a recipe I made long ago, lost, then found again recently. Beet Bread may not
sound terribly exciting, but the color is truly pretty spooky, and it’s a great sweet, spicy
bread in the tradition of pumpkin or zucchini bread! It’s fun to serve this and have tasters
try to guess what’s in it; an uncle once suggested I call it “Dracula’s Surprise”. I never had
much luck with the original glaze recipe, so I replaced it with this simple confectioner’s
sugar glaze.

INGREDIENTS

Makes one 9″ x 5″ loaf

Beet Bread:

1 cup brown sugar, firmly packed
1/4 cup vegetable oil
3 eggs
1 can (16 oz.) beets
3 c. sifted flour
2 tsp. baking powder
1 1/2 tsp. pumpkin pie spice
1 teaspoon ginger
1/2 tsp. salt
1 tsp. grated orange peel

Orange Glaze:

1 cup sifted confectioner’s sugar
1/2 tsp. grated orange peel
just enough orange
juice to make glaze thin enough to drizzle over cake.

INSTRUCTIONS

Preheat oven to 350″.
STEP 1 – Grease and flour loaf pan.
STEP 2 – Beat sugar, oil and eggs until light and fluffy.
STEP 3 – Drain beets, puree in blender or food processor until smooth.
STEP 4 – Stir into egg mixture
STEP 5 – Mix remaining ingredients together.
STEP 6 – Add to egg/beet mixture, mixing well.
STEP 7 – Turn batter into prepared pan.
STEP 8 – Bake at 350 degrees for 1 hour or until tests done.
STEP 9 – Let cool a few minutes, remove from pan, and cool on rack. Top cooled bread with glaze.

Orange Glaze:
STEP 1 – Stir together sifted confectioner’s sugar, grated orange peel, and just enough orange
juice to make glaze thin enough
STEP 2 – Drizzle over cake.
