Tired of Casseroles? Try Tink’s Brilliant Blender Quiche

Are you tired of casseroles? But… you still need a tried and true back-up plan?
Well, here it is! I made this the other day for diner, we just added salads and we were ready to go. I made it with those cute, tiny salad shrimp! ;-)
Using my low-carb biscuit mix, this is even great for those of us watching our carbs!
I was given some frozen blackberries and plan to make a dessert version later tonight for the July 4th Holiday.
This does take baking time, but the prep time is short. I spend more time washing the blender (I don’t have a dishwasher! LOL)

| This is my newest discovery! It works for savory dinners and for sweet desserts. When you are trying to decide on what casserole to fix, STOP, take a DEEP breath… and fix this instead. I use my homemade, low carb biscuit mix, but any biscuit mix will do. For the dessert version, add 1/2 cup of sugar and berries, or whatever sweet treat you wish. I am experimenting with this and will report back with results! |
| Ingredients - Savory Version |
| 1 1/2 cups milk 1 teaspoon vanilla (Tink Tip - this smooths out the quiche, so I use it in every quiche, even those with meat) 1/2 cup biscuit mix 6 tablespoons (3/4 stick) butter, room temperature 3 eggs pinch of salt 1 cup diced ham, turkey, chicken, shrimp, or bacon 1/2 small onion, saute in butter 1 cup grated sharp cheddar cheese Optional: 1 4 once can of sliced mushrooms |
| Step by Step |
| Preheat oven to 350 degrees F 1) Combine milk, vanilla, biscuit mix, butter, eggs, and salt in blender and mix well. Tink Tip - I start with the milk and butter and part of the biscuit mix, then alternate adding eggs and the rest of the biscuit mix. 2) Pour into ungreased deep 9″ or regular 10″ pie pan. 3) Let sit about 1 minute (it will start to thicken up!), but don’t wait too long. 4) Add meat/shrimp/whatever poking into top of batter. 5) Top with onions, mushrooms, and cheese. 6) Bake until top is golden, about 45 minutes. Let stand 10 minutes. 7) Serve and Enjoy! |
