I have started living a healthier lifestyle but I can’t give up my pumpkin pie. I have been making deep dish pumpkin pie for 25 years and wanted to keep up the tradition while making it better for me. This recipe has a few small changes using fat free products that taste just as good and are good for me. I love the gingersnap crust. |
| Ingredients |
| Pie Filling 1 29 oz. can pumpkin 1 cup sugar 1 12 oz. can fat free evaporated milk 1 cup Egg Beaters 4 tsp. cinnamon 2 tsp. ginger 1 tsp. ground cloves 1 10 inch deep dish gingersnap crust (recipe below) |
| Gingersnap Crust 2 cups gingersnap crumbs ¼ cup sugar 1/3 cup light margarine, melted |
| Step by Step |
| Pie Filling Mix pumpkin, sugar, egg beaters and evaporated milk. Stir in the spices. Pour into the prepared gingersnap crust. Bake in a preheated 425 oven for 15 minutes. Reduce temperature to 350 and bake 50-60 minutes or until knife inserted in the center of the pie comes out clean. Cool and serve with fat free whipped topping |
| Gingersnap Crust Mix crumbs, sugar and margarine. Press evenly over the bottom and sides of a 10 inch deep dish pie plate. Bake at 350 for 10 minutes and add pumpkin mixture. |
