Chewy Cocoa Brownies

My kids, even though they are all in their 20’s, seriously get into costumes for Halloween. The best is usually my son. Since he works in a grocery store, the public gets to see him all day. One year he went as a superhero with blue skin. That was the best because the kids coming into the store loved it.  For him, it was bad because he had to wear gloves all day or he would make all the food packages blue.

INGREDIENTS

1 2/3 cups sugar
3/4 butter, melted (1 1/2 sticks)
2 T water
2 eggs
2 tsp vanilla
1 1/2 c flour
3/4 cocoa
1/2 tsp baking powder
1/4 tsp salt
3/4 chopped pecans
3/4 c white chocolate chips
1/3 c toffee chips

INSTRUCTIONS

Preheat Oven to 350 degrees
STEP 1 - Grease 9×13 pan.
STEP 2 - Combine sugar, butter, and water in large bowl.
STEP 3 - Stir in eggs and vanilla.
STEP 4 - Combine dry ingredients into another bowl, stir to mix.
STEP 5 - Add to sugar mixture and stir.
STEP 6 - Stir in nuts and chips. Mixture is very thick.
STEP 7 - Spread into prepared pan.
STEP 8 - Bake 18-25 minutes or until wooden pick inserted in center comes out slightly sticky. Cool completely on wire rack.

Chippewa Creek Quilts - Wild Rice Soup

 Wild Rice Soup

There is a chill in the air and that means that it is time for a hearty soup to keep you warm. I have been making this soup for many years and it has evolved over time to what you see here. Wild rice is a staple for the Ojibwa people of this region and I was introduced to it about 30 years ago when I traveled to the family cabin located near the Lac Du Flambeau reservation. Wild rice in many forms has become a favorite in my family. Halloween can be chilly here and we always have to design children’s costumes so that a winter jacket will fit under it. This soup is great for warming up before or after trick or treating.

INGREDIENTS

1 cup finely chopped carrots
1 cup finely chopped celery
1 large onion, finely chopped
8 oz. fresh mushrooms, sliced
1 cup wild rice
1 1/2 cup white or brown rice
5 cups water
1/4 cup sherry
1 can cream of mushroom soup, undiluted
4 tbs. low salt chicken base
1 tbs. garlic powder
1 tbs. olive oil

INSTRUCTIONS

STEP 1 - In a large kettle sauté carrots, celery and onion in the olive oil.
STEP 2 - Add wild rice and white rice and sauté 5 minutes.
STEP 3 - Add water, sherry, mushroom soup, mushrooms and garlic powder.
STEP 4 - Simmer covered for about one hour stirring every 10-15 minutes.
STEP 5 - Add additional water as needed.
STEP 6 - About 15 minutes before serving add the chicken base and continue to simmer.
STEP 7 - Crumbled bacon may be added to the top of each bowl if desired.

Next to Christmas Halloween is my next favorite holiday When our son was little we always decorated the house up & I made his costumes too. Sometimes I would dress up as well to give out treats to all the little ghosts & goblins.

My son is grown- up now & we live far out in the country but I still love to decorate for the holidays & now I’m having a great time designing some quilts with holiday themes.

Since I spend alot of time now designing & quilting I love recipes that are quick & easy…this recipe is great for either breakfast or for serving before time to go out trick or treating!  Who doesn’t love pizza and this one is quite unique! And very tasty.  I hope you enjoy it as much as my family does.

INGREDIENTS

1 pkg. Jimmy Dean Fresh Sausage (regular or mild), cooked, crumbled & drained
1 can refrigerated crescent rolls
4 eggs, slightly beaten
1 cup frozen hash brown potatoes, thawed
3 tbs sweet red bell pepper, diced (or can use green)
1 cup cheddar cheese, grated
2 tbsp parmesan cheese (opt)
3 tbs milk
salt and pepper to taste

INSTRUCTIONS

Preheat oven to 375°.
STEP 1 - Separate crescent rolls into eight triangles.
STEP 2 - Place in an ungreased 12″ pizza pan with points toward the center.
STEP 3 - Press crescent rolls together to form a crust & seal perforations.
STEP 4 - Sprinkle cooked sausage evenly over crust.
STEP 5 - Top with potatoes & diced bell pepper. Sprinkle with cheddar cheese.
STEP 6 - Combine beaten eggs, milk & a salt & pepper.
STEP 7 - Pour egg mixture over crust.
STEP 8 - Sprinkle with parmesan.
STEP 9 - Bake 25 to 30 minutes or until crust is browned & eggs are set.

Makes 6 to 8 servings.

If I could celebrate Halloween all year long I would!  We are always the first in the neighborhood to have ghosts hanging from the trees, giant black balloon spiders with long, fuzzy pipe cleaner legs climbing our house, and nasty green severed hands scattered every which (witch!) way.  It’s the time of year that the crazy in me gets to come out and play publicly!  My favorite Halloween memory is one a few years ago when my kids were small.  My youngest son was scared to trick-or-treat and it took a lot of convincing to get him to ring the doorbell.  The nice man who answered the door wanted to talk, and commented that all the candy in my son’s bucket would make him sick.  The bucket flew into the air, candy rained down, and my son streaked down the sidewalk, screaming and crying that the man said his candy was poison.  Needless to say, we avoid that house every year…

INGREDIENTS - for 2 servings

2 mini pumpkins — cut across the top (seeded and cleaned)
2 Tablespoon brown sugar
a pinch of nutmeg
1 cup heavy cream
1 egg
2 Tablespoon powdered sugar
1/4 teaspoon cinnamon
1 Tablespoon butter
1/4 cup chopped pecans
1/2 cup graham cracker crumbs

INSTRUCTIONS

STEP 1 - Rub the inside of each pumpkin with one tablespoon of brown sugar mixed with a pinch of cinnamon and a pinch of nutmeg.
STEP 2 - Mix together the cream, egg, powdered sugar, cinnamon, and nutmeg and pour into pumpkins.
STEP 3 - Place the filled pumpkins or a cookie sheet and bake at 325 degrees for 50 min. Remove from oven.
STEP 4 - Mix together the butter, pecans, and graham crackers and sprinkle on top of the souffle.
STEP 5 - Return the pumpkins to the oven and bake 10 more minutes.

My Mom made these for use from time to time during the fall when we were
kids. They were simple no bake treats that we could help make. When we
were growing up Halloween celebrations were a lot tamer than they are
today and tended to be more focused on the fall itself. We made these on
top of the stove, this recipe has been updated to the microwave. Mom made
Chop Suey for us too, so we always had Chow Mein Noodles on hand.

INGREDIENTS

1 C Butterscotch Chips
1/2 C Peanut Butter
2 C Chow Mein Noodles
1/2 C Peanuts (these were optional for us)

INSTRUCTIONS

STEP 1 - Microwave Chips and Peanut Butter in 2 qt dish at 50% power for 3-5
minutes, stirring occasionally.
STEP 2 - Stir in peanuts and chow mein noodles when melted and smooth, and peanuts and noodles are coated completely.
STEP 3 - Drop on wax paper to set up.
STEP 4 - Put in refrigerator for faster set up or let sit overnight on counter.
Serves 12.

JoLene incorporates a story into each design and each part of the design

knitter in high school, which is when she learned basic pattern drafting.
She switched to handknitting in her mid twenties and has not looked back.

Her basic philosophy is “take charge of your knitting”, which carries into
other areas of her life as well. If there is something that she wants to
do or learn, she finds a way to do it.

“Many knitters tell themselves too much I could never do that” she says. “I like to encourage them to remember that all knitting is a combination of a few simple things, no
matter how complex it might look. There might be a steep learning curve on
a technique, or you might have to practice something for awhile, or you
might have to use stitch markers or what-have-you to get into the rhythm of
a stitch pattern, but there are ways to learn what you want to do if you
keep in mind what you want, rather than what you tell yourself what you
think you cannot”.
