Needlework and Quilting Holiday Bake Along 2007 Coconut-Pecan Pie
This pie was served at a local restaurant for many years. My neighbors, Pat and Helen, worked at the restaurant and baked this pie too many times to remember. The restaurant has closed, Pat has passed away, and I have since moved away from that neighborhood. I will always very fond memories of the many nights we sat on the front lawn in our lawn chairs solving all the problems in the world. Every time I bake this pie I think of Pat and Helen, good friends and good cooks.

Ingredients
3 eggs
1 1/2 c. sugar
1/2 c. butter
3/4 T Lemon Juice
1 tsp. vanilla
3 1/2 oz. coconut
1/2 finely chopped pecans
1 premade, unbaked pie crust
Step by Step
Preheat oven to 350 degrees F
1) Mix all ingredients together (except for the pie crust)
2) Pour into the pie crust
3) Bake 30 mins. in a 350 degree oven
4) Serve and Enjoy!
