Let’s start out this year’s Holiday Bake Along with Diane’s recipe for Poppy Seed Thumbprint Cookies!

| My mother ALWAYS serves some type of cookie with poppy seeds every Holiday season. It’s always fun to see which poppy seed cookie will make it out onto the dining room table (topped with one of Diane’s table runners, of course!) each year. This particular cookie is very easy, not very time consuming, looks great, and tastes delicious, too. Enjoy! |

| 1 2/3 c whole wheat pastry flour 1 c all purpose flour 2 T poppy seeds 1/2 t salt 1/2 c unsalted butter, slightly soft 1/2 c canola oil 1 c confectioners sugar 1 large egg 1 t freshly grated lemon zest 1 t vanilla 1/3 c cherry or other fruit preserves |
| Step by Step |
| Preheat oven to 300 degrees F. 1) Whisk whole wheat flour, all purpose flour, poppy seeds and salt in a large bowl. 2) Beat butter, oil and sugar in another large bowl with electric mixer on high until creamy. 3) Add egg, lemon zest, and vanilla - beat to combine with butter mixture. Then stir in dry ingredients. 4) Form tablespoonsful of dough into balls and place on ungreased baking sheet about 2 inches apart. 5) Gently press the tip of you thumb or finger in the center of each cookie. 6) Place 1/2 t preserves in each center. 7) Bake the cookies until the edges are lightly golden 28 to 30 minutes. 8 ) Immediately transfer to wire rack to cool completely. 9) Serve and Enjoy! |
