Pumpkin Souffle (in a mini pumpkin)

If I could celebrate Halloween all year long I would! We are always the first in the neighborhood to have ghosts hanging from the trees, giant black balloon spiders with long, fuzzy pipe cleaner legs climbing our house, and nasty green severed hands scattered every which (witch!) way. It’s the time of year that the crazy in me gets to come out and play publicly! My favorite Halloween memory is one a few years ago when my kids were small. My youngest son was scared to trick-or-treat and it took a lot of convincing to get him to ring the doorbell. The nice man who answered the door wanted to talk, and commented that all the candy in my son’s bucket would make him sick. The bucket flew into the air, candy rained down, and my son streaked down the sidewalk, screaming and crying that the man said his candy was poison. Needless to say, we avoid that house every year…

INGREDIENTS - for 2 servings
2 mini pumpkins — cut across the top (seeded and cleaned)
2 Tablespoon brown sugar
a pinch of nutmeg
1 cup heavy cream
1 egg
2 Tablespoon powdered sugar
1/4 teaspoon cinnamon
1 Tablespoon butter
1/4 cup chopped pecans
1/2 cup graham cracker crumbs
INSTRUCTIONS
STEP 1 - Rub the inside of each pumpkin with one tablespoon of brown sugar mixed with a pinch of cinnamon and a pinch of nutmeg.
STEP 2 - Mix together the cream, egg, powdered sugar, cinnamon, and nutmeg and pour into pumpkins.
STEP 3 - Place the filled pumpkins or a cookie sheet and bake at 325 degrees for 50 min. Remove from oven.
STEP 4 - Mix together the butter, pecans, and graham crackers and sprinkle on top of the souffle.
STEP 5 - Return the pumpkins to the oven and bake 10 more minutes.
