Smashing Pumpkin Pasta - italYarns
One of the best parts about organizing events such as the Halloween Countdown and the Holiday Bake Along is getting to know other foodies. I was quite thrilled when Marco asked about submitting a recipe.
He didn’t know, but making pasta from scratch is my cooking project this winter. ;-)
In the course of getting the recipe and figuring conversions for North America, we emailed back and forth quite a lot. Marco even offered to fix dinner for me, conveniently ignoring the fact that we live on different continents! LOL
Here is Marco’s recipe for Smashing Pumpkin Pasta, perfect for a Halloween dinner and at the top of my list of pasta recipes this winter!

| Ingredients |
| 500 grams/ 16 oz of pumpkin pulp (orange sweet kind) << Marco and I went round and round about the squash he uses for the recipe. Here is a link to a picture: http://tinyurl.com/ypmegj The closest North American equivalent would be a butternut or acorn squash.>> Olive oil salt vodka -100ml (3 to 4 fl oz) carrots onions leek Italian spaghetti (so called because made from “stiff” wheat, but I guess the international pasta gives similar results, and it’s cheaper) |
| Step by Step |
| 1) Smash the uncooked pumpkin/squash and make it soft like a cream. 2) Add some carrot, onion, and some leek and smash again for a while, until you see the small colored corianders inside the pumpkin. 3) Start boiling the water for the spaghetti, and once the water boils add spaghetti and salt (as much as you prefer) 4) In the meantime, put 1 or 2 spoons of oil in a wide teflon frying pan 5) when the oil is warm add the cream previously made, and make it fry about two minutes. 6) Don’t burn it, just fry a little. in this time it’s better to agitate. 7) Add one glass of vodka, and cover immediately to avoid an explosion!;-) 8) You can remove the cover after 2 minutes, the alcohol should already gone. mix continuously! 9) Leave it fry until the vodka is evaporate, and turn off the fire. 10) Strain the pasta, put it in the pan, add some gas and mix up. when you hear the fry noise the pasta is ready for the dish. 11) Depending of the temperature of the pan, you could be able to leave the pumpkin in the original orange, if you fry too hot it could be darker and more crispy, but also more tasty. 12) Serve and Enjoy! |
