Pumpkin Crunch Cake - Caroline’s Thread and Canvas
I don’t know about you, but this recipe set my taste buds to watering!
Now my goal is to con or blackmail Caroline in to finding copies of these great vintage cookbooks for my collection! LOLOL I went to grad school at VCU and loved every minute I lived in The Fan, so it would be WONDERFUL to find these treasures.

| I was just getting ready to teach a Russian Punchneedle class in which our project features a pumpkin design by Charlotte Dudney. Suddenly my mouth was watering for a slice of pumpkin cake. Pumpkin cake and Halloween just go hand in hand. When I left my shop, Caroline’s Thread and Canvas, I ran home and grabbed one of my favorite cookbooks, VIP Volume VIII. Back in the ’80’s & early ’90’s a series of books were published of Virginia recipes to benefit The American Cancer Society. This particular issue is a collection of “Winners” from over the years.Anyway, here’s my favorite to satisfy Halloween pumpkin cravings… Caroline |
| Ingredients |
| 1 cup milk 3 eggs 1 cup sugar 1 teaspoon cinnamon 1/4 teaspoon ginger 1/8 teaspoon nutmeg 1/2 teaspoon salt 1 teaspoon vanilla squirt of lemon juice 1 30-ounce can pumpkin 1 box yellow cake mix 3/4 cup margarine 1/2 cup pecans, chopped whipped cream |

| Preheat oven to 350 degrees F. 1) Mix first 10 ingredients together. 2) Spread evenly in a 9 x 13 ” pan. 3) Sprinkle dry cake mix evenly over pumpkin mixture. 4) Melt margarine and spoon over top of cake mix evenly. 5) Sprinkle nuts over margarine. 6) Bake for 1 hour at 350 degrees. 7) Cool and cut into squares. 8) Serve with whipped cream. 9) Serve and Enjoy! |

You simply go the 2 miles cross over the train tracks and I’m right there!
