Teresa Wentzler is one of my special online professional friends. We talk from time to time about business and yes, food and baking, as well! For many years, she and a group of friends would get together for Holiday Cookie Baking. She has been kind enough to offer some suggestions for successful Cookie Baking — which I will be posting in November.
Today, she is our first contributor for the Halloween Countdown, with a yummy Muffin recipe. Next year I am threatening to make all of my friends send me samples! LOLOL

| Halloween holds a special place in my heart: it’s the day I was married. (26 years ago!) Originally, Carl and I had planned to wed in December. But, because we decided to ask my grandfather, a retired minister, to perform the ceremony, we had to move the date forward quite a bit. At that time, my grandparents lived in New York’s famous (or infamous!) snow belt: where it’s not at all uncommon to get several feet of lake-effect snow at once, beginning early in the season. Realizing that safe travel would be very iffy for them after October, we decided to change the wedding date. The search was on to find a church that was available for a Saturday evening sometime in October. As it happened, October 31st was the only un-booked Saturday evening for that month!October is my very favorite month of the year: I love autumn here in north-central Pennsylvania, with its frosty nights, cool sunny days, gorgeous foliage, and bounty from the orchard! Here is one of my favorite recipes… perfect for this time of year: |

| Muffins: 2-1/2 c. flour 2 c. sugar 1 tbsp. pumpkin pie spice 1 tsp. baking soda 1/2 tsp. salt 2 eggs, lightly beaten 1 c. solid pack canned pumpkin 1/2 c. vegetable oil 2 c. peeled, finely chopped apples |
| Streusel Topping: 2 tbsp. flour 1/4 c. granulated sugar 1/2 tsp. ground cinnamon 4 tsp. butter ~Cut butter into dry ingredients until mixture is crumbly. |

| Pre-heat oven to 350 degrees F (335 degrees if using dark pans)Muffins: 1) In a large bowl, combine first 5 ingredients; set aside. 2) n a medium bowl, combine eggs, pumpkin and oil. 3) Add wet ingredients to dry and stir just until moistened. 4) Fold in apples. 5) Spoon batter into greased or paper-lined muffin cups: fill to 3/4 full. 6) Sprinkle with streusel topping. 7) Bake for 35 to 40 minutes, or until a toothpick inserted in center comes out clean. 8) Serve and Enjoy!Note: I make these muffins in standard cupcake pans: the recipe makes 24 cupcake-size muffins. Decrease the baking time to 25 to 28 minutes. This recipe makes one of the moistest muffins I’ve ever tasted! |
