Why this recipe?
My son, who has Asperger’s syndrome, was on a gluten-free, casein-free diet for most of his young life.
Halloween was especially painful, because most Halloween candy contains milk and gluten! I was thrilled to find this recipe which satisfied his endless sweet tooth – but I could make it with unsalted Fleischman’s margarine, which contained no dairy or gluten. He’s ok with gluten now, but my mom still prepares this caramel corn and popcorn balls studded with gumdrops at Halloween – and ALL my children (as well as the adults) love it! Although the dentist isn’t crazy about it…

Ingredients
2 sticks butter or margarine
1/2 cup corn syrup
2 cups brown sugar, packed
1 tsp sale
1/2 tsp baking soda
6 quarts popped popcorn
Step by Step
1) Mix butter, corn syrup, brown sugar and salt in a large saucepan.
2) Bring to a boil. Let boil 5 minutes, then mix in baking soda.
3) Pour over popcorn in a large bowl, stir to combine, then spread into large broiling pan.
4) Bake 1 hour at 150-200 degrees, stirring occasionally.
5) Store in airtight container.
6) Serve and Enjoy!
