Pumpkin Pie Pudding
HALLOWEEN MEMORY
When my husband and I lived in Charlottesville, Virginia, we often visited Williamsburg in the fall, when the leaves crunch underfoot as you cross the cobblestone roads. At an authentic colonial meal there one October, we were served a delicious pumpkin pudding, spicy and steaming hot, as a side dish. I spent years searching for a recipe similar to what I had tasted, and finally found one. It is perfect as a side dish with pork or turkey. Or serve it with whipped cream as a comforting, warm end to a fall dinner on a chilly day. Added bonus: Since you cook it in a slow cooker (crock pot), it also makes the house smell great all day! – Susan Brubaker Knapp, owner, Blue Moon River
INGREDIENTS
15 oz. can pumpkin (not canned pumpkin pie mix)
12 oz. can evaporated milk
1/2 cup sugar
1/2 cup buttermilk pancake mix (such as Bisquick)
2 eggs
2 T melted butter
1 T pumpkin pie spice
2 t. vanilla
INSTRUCTIONS
STEP 1 – Mix all the ingredients together and beat until smooth.
STEP 2 – Pour into a greased slow cooker pan.
STEP 3 – Cover and cook on low for 6-7 hours.
